Bravo for Chef Bruce Scott

I enjoyed reading Chef Bruce Scott's lengthy but informative editorial in last week's Citizen. Although he may have taken the F.C. Foodie column a bit too personal, he brought up many thoughts and observations that were right on the mark.

We live in such a fast-food-oriented society that many of us have forgotten how to sit down and enjoy a freshly prepared and creatively presented dinner.

Having spent a number of years in the resort business, I recall that the most common complaint in our restaurants was not the quality of our food, but rather how "slowly" it was delivered to the table and these people were on vacation! Well folks, if you want your dinner prepared in five minutes, there are probably several boxes in your freezer that will suffice.

We've been delighted with the recent addition of independent restaurants to Peachtree City, and especially enjoy The Famous Fish Company. While watching their skilled chefs prepare our dinner, I've yet to see any of them open a package and "puncture to vent."
