Marshmallow Recipes
1 package (10 oz.) marshmallows, regular size (38-40 marshmallows)
2 cups (12 oz. package) semisweet chocolate chips
Chopped pecans
Multi-color sprinkles
Crisp rice cereal
Arrange marshmallows on tray; freeze 15 minutes. Microwave chips
in microwavable bowl on high 2 to 2-1/2 minutes, or until smooth
when stirred, stirring every minute.
Dip marshmallows into melted chocolate; turn until coated. Roll
in pecans, sprinkles or crisp rice cereal.
Place on wax paper-lined tray. Refrigerate or keep in a cool place.
Prep time: 30 minutes plus freezing. Makes three dozen.
Indoor S'mores
Graham Crackers, broken in half
Milk chocolate bars (1.55 oz. each), broken in half
Marshmallows, regular size
For each .more, top one graham cracker half with half one
chocolate bar and one marshmallow. Place on paper towel.
Microwave on high 10 to 15 seconds, or until marshmallow
is softened. Cover with second graham cracker half; lightly press together.
Prep time: 5 minutes.
Microwave cooking time: 15 seconds.
Variations:
· Instead of microwaving marshmallows, place them on a stick
or skewer and toast them over a candle.
· Spread second graham cracker half with peanut butter or
raspberry preserves.
· Top softened marshmallow with sliced strawberries or
sliced bananas.
· Drizzle softened marshmallow with caramel topping.
· Substitute chocolate wafer cookies for graham crackers.
Marshmallow Creme Pops
1 cup orange juice
1 jar (7 oz.) marshmallow creme
2 cups miniture marshmallows
1 cup thawed non-dairy whipped topping
Beat orange juice and marshmallow creme with electric mixer
on medium speed until well blended.
Fold in marshmallows and whipped topping.
Spoon into 5 oz. paper cups. Insert wood sticks, such as
caramel apple sticks. Freeze until firm.
Prep time: 10 minutes plus freezing. Makes 8 servings.
Marshmallow Crispy Treats
1/4 cup margarine or butter
1 package (10 oz.) marshmallows, regular size (38-40
marshmallows)
6 cups crisp rice cereal
Microwave margarine in large microwavable bowl on high
45 seconds or until melted. Add marshmallows; toss to coat woth
margarine.
Microwave 1-1/2 minutes or until smooth when stirred, stirring
after 45 seconds.
Immediately add cereal; mix lightly until well coated. Press
into greased 13X9-inch pan.
Cool; cut into squares.
Prep time: 10 minutes.
Microwave cooking time: 2 minutes, 15 seconds.
Variations:
· Stir one envelope (0.13 oz.) of unsweeteded flavored drink
mix (any flavor) into melted marshmall mixture. Note: Increase
marshmallows to 16 oz. and crisp rice cereal to 9 cups.
· Substitute whole-grain flake cereal, raisin bran, corn flakes,
or toasted whole grain oat cereal for crisp rice cereal.
· Stir 1/2 cup peanut butter or 1/2 cup raisins into melted
marshmallow mixture.
